Festive Pearl Couscous and Pumpkin Salad

Pearl Couscous & Pumpkin Salad with pickled onions, feta, almonds, spinach and vibrant green parsley dressing.

All that is required to assemble this dish is to toss the dressing through, and garnish with the reserved feta, almonds and pickled onions supplied.

Serves 6-8.
